If you have a sprayer by your kitchen faucet, don't forget to run anti-freeze through that as well as all of the above mentioned items. Don't ask me how I know about forgetting this....

Zucchini Soup

Now that all those pesky zucchini have arrived, I thought I'd share this recipe with you. Enjoy!
SUMMER SQUASH SOUP
1 Tbsp olive oil
1/2 cup shallots or onions of choice
1/4 cup slice green onions and tops
3 cloves garlic, chopped
4 medium or 1 large zucchini (about 2 lbs) or other summer squash, chopped
1 cup russet potato, cubed
4 cups vegetable stock or water
1 cup kale or spinach leaves
1.5 tsps dried tarragon or thyme leaves or other desired herbs
1/2 cup half and half or milk
salt and pepper to taste
Heat oil over medium heat until hot in a large saucepan or pot. Saute shallots, green onions and garlic until tender, about 5 minutes.
Add chopped zucchini and potato; saute 5-8 minutes longer.
Add stock, kale and herbs to saucepan; heat to boiling. Reduce heat and simmer, covered until vegetables are tender, 10-15 minutes.
Process soup in food processor until smooth; return to saucepan/pot. Stir in half and half; season to taste with salt and pepper. Heat and serve warm or refrigerate and serve chilled. Serve with croutons
Another way to use up the squash is to cook them in chicken broth and then puree in blender. Then freeze and use as a soup base whenever you make soup.

Dutch oven liner?

Our grandson has requested an apple cobbler or dump cake made in the dutch oven this weekend. Can I use a crockpot liner in the DO? I just want to make clean-up easier. I know someone here must have tried it at some time. I figure that if I kind of tuck it inside the lid, I won't have to worry about it catching on fire. What do you think?

Just got my Fasta Pasta a couple of days ago and I love it! No more steaming up the camper or waiting forever to get the water to boil. This is probably one of the best things I ever purchased online and it's all thanks to the good reviews that you posted here.

Corn/Kidney bean dip recipe needed

Recently we went to a potluck and someone brought the best dip I've had in awhile, but I can't find a recipe for it. It had whole kernel corn, kidney beans, pickle relish and who knows what else in it. We used Scoops for serving it and I am wishing I had the rest of the ingredients listed somewhere. It was a clear base, not like salsa. Anyone have a clue?

I found it odd that when we were in TX this winter none of the supermarkets had any dried cilantro.

Can you make cilantro flakes?

I often dry extra parsley for future use, but have never tried to dry cilantro. I looked far and wide for cilantro flakes but cannot find them in the store, so I am wondering if maybe it does not dry out very well. We live quite a ways from any grocery stores, so having some dried ingredients around is helpful. What is your experience?

Well the aloe farm on Inspiration Rd does not give tours, but we did find one that does give them. It is at Aloe King and is located in Weslaco. If you are interested, exit on Mile 2 East Rd and go south 1 mile. The road kind of dead ends and it is right there to the left. They give a trolly ride tour out into the fields for $1.00 and it is very informative (lasts about an hour). Then they give a presentation indoors that is more of a sales pitch about the products. The indoor portion was in a rather enclosed area without any fans and I could not stand the heat, so I left without attending that. They have a little restaurant on the grounds and many people were eating there. They do want you to call for reservations, as space is limited to 20 people at a time. The tours are at 9 a.m. and 1 p.m.

I saw an ad today for a flea market on N. Exp 77/83 in Brownsville. Open on Sat and Sun only. Anyone ever been there? Is it a nice market or junky?

New Wave on 10th is a good buffet also. The outside of the place does not look so good, but the inside is clean and the food is hot. It's always very busy for lunch time.

Wireless "G" vs "N" adapter

I am not a techie, so be gentle -
I was having trouble with a weak wifi signal so I bought a wireless-N USB network adapter. Now I can get a connection, but someone told me I should be going with a "G" adapter.
I thought the only difference in the two was the range - with the N being the better range model.
I am getting a fairly good signal strength now, but am I missing something?
